My mom talks about the flavor and crunch of her mother’s pickles often, and she hasn’t had them in a lot of years. Ladle the vinegar solution into the jars to cover the vegetables. I know that everyone seems to be all about the sterilized canning, and I’ve done a good bit of that in the past. It’s a good idea to keep the beet in quarters so you can distinguish their shape from the turnips when serving (some people prefer not to eat raw beets).

Certainly neither we nor the Lebanese, even in the remote areas, have to store up for winter out of need.
